Reuben Dip

Growing up as a child, my mom, Judy, used to make open faced Reuben sandwiches quite a bit. It was her absolute favorite sandwich to make. While I'm not a huge fan of rye bread, when she made those sandwiches with the corned beef, sauerkraut, and Swiss cheese all together on rye bread, I was usually always asking for seconds.


Last week, when Matt's mom, Debbie, made corned beef in her Instant Pot for St. Patty's Day, it brought me back to the yummy smell of Reuben sandwiches in the oven. I wanted one right then and there. But then I thought, instead of making a sandwich, why not make a Reuben dip and use rye crackers. Just my luck, Debbie ended up having leftovers and she so graciously gave me a cup of her delicious corned beef for my Reuben dip.



 


Ingredients you will need:


1 cup of corned beef (or 4 packages of thinly sliced deli corned beef)

1 8oz package of cream cheese, cubed

1 cup (or 8oz can) of sauerkraut, drained

1 cup of sour cream

6 - 7 slices of Swiss cheese, torn into strips (or 1 1/2 cups shredded Swiss cheese)

Rye bread or crackers





Add the first five ingredients into a 1 - 1/2 qt slow cooker. I made sure to drain the sauerkraut before I added it to the slow cooker so the dip doesn't become too runny. You can always add a little more in the dip if you want more of a sauerkraut taste. I can remember my mom's Reuben always having lots of sauerkraut on it and my dad's Reuben had very little. It's all about preference.





Cover your slow cooker and set it on low for 2 hours, stirring occasionally. Serve the dip warm with crackers or bread.





 




This dip can be pretty much be described as eating a Reuben sandwich but, with crackers. And if you like Reuben sandwiches as much as I do, you are going to love this dip!





I couldn't wait to try this dip once it was done. I sometimes found myself hovering over the slow cooker, drooling. The smell of the dip brought back memories of me with my mom in the kitchen, watching her make her Reubens and helping out.


Another thing you can do with this dip is maybe drizzle some Thousand Island dressing on top or even mix it in to your liking. However you choose to do it, I hope you like it. Enjoy!
