
It's that time of year. The time of year that majority of the country dresses in green, drinks green beer, and McDonald's releases their famous Shamrock Shake. Ahhh, the Shamrock Shake. While I love that creamy minty deliciousness just as much as the next person, I don't love all the added sugar and calories. So I thought, "why not make something that is not only creamy and minty but, healthy as well." I also made a healthy coconut whip topping to add to the yummy goodness.
This will be a two part recipe. I will make the vanilla mint shake first and then the coconut whip topping second.
Vanilla mint shake ingredients:
1 1/2 tsp vanilla extract
1 large handful of fresh mint leaves
1/2 of an avocado
1 cup coconut milk, unsweetened
1 cup ice
2 tbsp raw organic honey (or more if you want your shake sweeter)
crushed Andes mints, optional

Add all the ingredients together in your blender and mix them together.

When your shake is at a smooth consistency, pour it in a glass and set it aside. Now on to the coconut whip topping.
Coconut whip topping ingredients:
2 tbsp powdered sugar
1 400ml can coconut cream

Chill the coconut cream in the refrigerator overnight or for 8 hours before using. Refrigerating it helps separate the cream from the liquid. When ready to use, DO NOT tip over the can or shake it up. Doing so will mix the cream and liquid together and you only want to use the cream to make the whip topping. Open the can and scrape out the cream into a bowl, leaving the liquid still in the can. Add in the powdered sugar. Mix the ingredients together with a hand mixer on low for a few seconds and then on high until creamy and smooth looking. Use immediately or refrigerate for up to 1 or 2 weeks.

Spoon the coconut whip topping on to your shake and you are done!

This shake is all about natural color and good for you ingredients. No added dye or sweetener for color or flavor. You can drink one and not wonder what is going into your body. Plus it is so delicious too! I can indulge myself in a couple of these shakes and not feel an ounce of guilt.

I added crushed Andes mints on the top of mine just for a little added chocolate and mint flavoring. If you aren't a huge fan of Andes mints, you could also add shredded coconut or shaved dark chocolate. Enjoy!
